Filtration is made with two alternating stages, that guarantee the continuous plant functioning. The obstraction is taken under control using two pressure transducers placed upstream and downsteam of the filtering unit. When the setted limit value is reached, the filtering is turned to the second battery and the first battery is cleaned. This operation is totally automatic, warming the unit with hot water. The filter is cleaned and warmed until the next functioning phase. During this phase chocolate is progressively decrystallized. Just before using the filtering unit, hot water is closed, thermostatic water is opened, and the line is feeded through the opposite way. In questo modo si evacua il prodotto stemperato e lo si sostituisce completamente con prodotto fresco e ben temperato. When the line is totally feeeded, the filter is ready to work, now you can invert the flow, restarting the usual working flow, and washing the other line. The PLC helps the user managing production cycles and washing procedure setting up, according to the treated products. Plant sizing is defined according to the required capacity.
